Our friend Eleanor Ozich from Petite Kitchen has a beautiful recipe book, Sweet Delights, filled with treats that are nourishing and delicious. We are excited to share one of these yummy recipes with you, her little golden oat biscuits. 

Oats are a great source of energy, making them perfect for busy parents or little one's on-the-go. These little honey-coloured oat biscuits are mercifully less sweet than the majority of biscuits. A touch spice or zest could work nicely with the delicate coconut notes, making them perfect for tucking into the children’s lunch boxes. 


Ingredients 

1 1/2 cups rolled oats
1 1/4 cups spelt or buckwheat flour
2/3 cup rapadura or coconut sugar
1/3 cup desiccated coconut
1 free range egg
115g melted unsalted butter
1/2 teaspoon baking soda
a pinch of sea salt 


Instructions

Pre–heat the oven to 170°C and line a tray with baking paper.

Add all ingredients to a mixing bowl, and mix until well incorporated.

Using your hands, roll the mixture into small balls about the size of a golf ball and place 2cm apart on the baking tray.

Press down lightly on each ball to flatten in half.

Bake for 18–20 minutes.

Will keep in an airtight container or jar for up to a week. Makes 18 biscuits.
