Make fresh pasta with Carter Were
For a deliciously fun activity to do with your little ones (that can also help you prep for dinner) is making fresh pasta. Surprisingly easy to make with only a few ingredients needed, making pasta is a great way to keep the kids entertained while teaching them some easy kitchen skills. Cooking wiz Carter Were has shared with us her quick and easy way to make fresh pasta with your little ones.
Ingredients:
- Plain flour, 3 1/2 cups
- Whole eggs, 2
- Egg yolks, 4
- Salt, big pinch
Instructions:
Pour the flour onto a clean, dry bench and make a well in its centre. Beat the eggs and salt in a bowl with a fork. Pour into the well.
With the fork, start working the flour into the egg-well until the wet and dry are roughly combined. Then bring the dough together into a shaggy ball with your hands. If it seems a bit dry, add a tablespoon of water.
Knead the dough with your hands for about 5 minutes until smooth. Leave it to rest for 30 minutes in a bowl with cling film.
Roll the dough out on a bench well dusted with flour. You can use a rolling pin, wine bottle or a pasta machine. You need it to roll the pasta thin enough so you are able to read a postcard through it.
Cut the pasta to any shape you like. For fettuccine or other wide noodles, loosely roll up the pasta as if you were rolling a newspaper. Cut the strips of pasta with a knife across the cylinder as fat or thin as you like. Unravel carefully.
If you want to eat the pasta that day, put it in the freezer first to dry a little. It also prevents it from sticking together. If you’re not eating that day, leave it in the freezer then thaw before cooking..
To cook, bring very salty water to the boil. Drop the pasta in and cook for about 5 minutes. You want the pasta to be al dente - still firm and has some bite. Taste your pasta as it’s cooking to judge when it's ready.
